Ingredients:

For the chicken:

2 boneless, skinless chicken thighs or breasts

1 cup buttermilk

1 tsp hot sauce (optional)

1 tsp paprika

1/2 tsp garlic powder

1/2 tsp onion powder

Salt & pepper to taste

For the breading:

1 cup all-purpose flour

1/2 cup cornstarch

1 tsp paprika

1/2 tsp cayenne pepper

1/2 tsp black pepper

Pinch of salt

For frying:

Vegetable oil for frying

For assembling:

4 brioche buns, toasted

Mayo or spicy sauce

Lettuce leaves

Tomato slices

Pickles

Instructions:

In a bowl, whisk buttermilk, hot sauce, paprika, garlic powder, onion powder, salt & pepper. Add chicken, cover, and marinate 30 minutes (or overnight for max flavor).

In another bowl, mix flour, cornstarch, and spices for the breading.

Heat oil in a deep skillet to 350°F (175°C).

Remove chicken from marinade. Dredge in flour mixture, pressing to coat well.

Fry chicken until golden brown and cooked through (about 6–8 minutes per side).

Drain on paper towels.

Assemble burgers with toasted buns, sauce, lettuce, tomato, pickles, and that spicy fried chicken!
