Sausage & Vegetable Stew
Ingredients:
1 lb smoked sausage or Italian sausage, sliced
2 tbsp olive oil
1 onion, diced
3 garlic cloves, minced
3 carrots, sliced
2 celery stalks, chopped
2 potatoes, peeled and diced
1 zucchini, sliced
1 bell pepper, chopped
1 (14.5 oz) can diced tomatoes
4 cups chicken broth or water
1 tsp smoked paprika
1/2 tsp dried thyme
Salt & pepper to taste
Fresh parsley for garnish (optional)
Instructions:
Brown the Sausage:
In a large pot or Dutch oven, heat olive oil over medium heat.
Add sliced sausage and brown until slightly crispy. Remove and set aside.
Sauté Vegetables:
In the same pot, add onions, garlic, carrots, and celery.
Cook for 5–6 minutes until softened.
Add Remaining Ingredients:
Stir in potatoes, bell pepper, zucchini, tomatoes, broth, and seasonings.
Bring to a boil, then reduce heat and simmer for 25–30 minutes, or until vegetables are tender.
Finish:
Return the sausage to the pot and simmer for 5–10 more minutes.
Adjust seasoning if needed.
Serve:
Garnish with fresh parsley.
Enjoy with crusty bread or over rice if desired.
