Rogan Josh (Lamp Curry)
*Ingredients:*
– 500g lamb (cut into cubes)
– 2 tbsp oil/ghee
– 1 large onion, finely sliced
– 1 tbsp ginger-garlic paste
– 1 cup plain yogurt (room temperature, whisked)
– 1½ tsp ground coriander
– 1 tsp cumin
– 1 tsp paprika
– ½ tsp turmeric
– ½ tsp cayenne pepper (optional)
– 1 tsp garam masala
– Salt to taste
– 1½ cups water or stock
*Instructions:*
1. *Sear lamb:*
– Heat oil in a heavy pot. Brown lamb on all sides. Remove and set aside.
2. *Cook onions & spices:*
– In the same pot, sauté onions until golden. Add ginger-garlic paste and cook for 1–2 minutes.
– Add coriander, cumin, paprika, turmeric, and cayenne. Stir until fragrant.
3. *Add yogurt:*
– Lower heat and stir in yogurt gradually to prevent curdling. Mix well.
4. *Simmer:*
– Return lamb to the pot. Add salt and water/stock.
– Cover and simmer on low for 1.5–2 hours until lamb is tender and sauce thickens. Add garam masala in the last 5 minutes.
