Hawaiian Chicken Sheet Pan
Ingredients:
– 2 pounds chicken breast, cut into 1-inch cubes
– 1 bell pepper, sliced
– 1 red onion, sliced
– 1 cup pineapple chunks (fresh or canned)
– 3 tablespoons soy sauce
– 2 tablespoons honey
– 2 tablespoons olive oil
– 1 teaspoon garlic powder
– 1 teaspoon ginger, grated
– Salt and pepper to taste
Directions:
1. Preheat the oven to 400°F (200°C).
2. In a large bowl, whisk together the soy sauce, honey, olive oil, garlic powder, ginger, salt, and pepper.
3. Add the chicken, bell pepper, onion, and pineapple to the marinade and toss to coat.
4. Spread the mixture evenly on a sheet pan.
5. Roast in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the vegetables are tender.
