Looking for something healthy but hearty during the cold winter season? Well this recipe is sure to hit the spot.

Ingredients: Red bean and baby potato Grilled Beef
• 500g Baby potatoes (cut in half or whole)
• 1 can Red kidney beans
• Salt and pepper
• Canola oil
• Onions (diced)
• Garlic
• Variety of spices according to spice (Mixed herbs, parsley, steak and chops)
• Beef (tenderise the meat to make it softer if it is too thick)

• Heat up some oil in a grill pan, add in the diced onions and cook them until they are golden.
• Add in the mixed spices and garlic to the onions.
• Add in the tenderised meat and grill/cook it evenly on both sides.
• Add in the baby potatoes. Allow to cook with the meat.
• When the meat and potatoes are done take it of the stove and allow to cool.
• Drain the beans of the liquid and then mix the beans with the potato and beef mixture.
Ingredients: Spinach and roasted veg couscous
• 1 cup couscous
• 1 cup boiling water
• Half a bundle of Spinach (chopped)
• Mixed veggies (can be frozen or a fresh selection of your choice such as sweetcorn, carrots, green pepper, baby marrow)
• Salt and pepper
• Butter

• In a frying pan, melt some butter. When the butter is hot, add in the veggies and roast them until they are nicely browned.
• Add in the bundle of spinach and allow it to wilt (shrink). When the spinach and veggies are ready take them of the stove and allow to cool.
• In a pot, add in the hot water and allow it to boil. Once boiling, add in the dry couscous with some salt and pepper for taste. Stir until the water is absorbed and the couscous is ready (5-10 minutes.
• Mix the spinach and roasted veg mixture with the prepared couscous.
